Eugene Gagliardi's first hit was Steak-umms, which he sold as part of his family's meat business to H. J. Heinz 10 years ago. His new company uses a similar idea: boneless "spareribs" made of restructured meat. With additional management and venture capital backing, Designer Foods, in Wilmington, Del., is pitching its Spare the Ribs to supermarkets and fast-food chains.
