New business information on edible flowers in the gourmet cuisine industry.

Paradise Farms Inc. was doing well with its line of culinary herbs, but Pamela and Jay North wanted to break new ground. So they began growing flowers that could be packaged and sold as gourmet cuisine. Today, their Summerland, Calif., company grows 45 tasty floral varieties -- including pansies, marigolds, and nasturtiums -- and provides about 80% of the flowers eaten in restaurants. The current challenge: convincing consumers to buy edible flowers in
supermarkets.
